dc.description.abstractBu araştırma, süt ve süt ürünleri işleyen, özellikle dondurma fabrikalarında, temizlik amacıyla kullanılan deterjanların seçiminde dikkat edilmesi gereken faktörlerin saptanması amacıyla yapılmıştır. Burada öncelikle deterjanların etkinlikleri belirlenmiştir. Daha sonra süt ve ürünlerini işleyen işletmeler için en uygun deterjanlar seçilmiştir. Böylece etkisi olmayan veya fazla deterjan kullanımından kaynaklanabilecek; maliyet artışı, zaman ve verimlilik kaybı, mikrobiyel riskler ve çevre kirliliği gibi faktörler önlenmeye çalışılmıştır.tr_TR
dc.description.abstractThe aim of this research was to determine some important points in which care must be taken when choosing detergents used in dairy products processing plants especially ice-cream producing plants. First of all, the effectiveness of the detergents were determined and than the most suitable detergents were prefered. In this way, it was tried to prevent some factors which cause rising of cost, loosing of time and yield, microbiological risks, environment pollution originated from using non-effective detergents or using excessive amount of detergents.en_US
