Abstract
Bu çalışmada, ülkemizdeki tüm 3 fazlı zeytinyağı işletmelerinin, 2 faza geçmesi durumunda mevcut pirina tesislerinin yeterliliği analiz edilmiş ve CBS (Coğrafi Bilgi Sistemi) ortamında 3 farklı senaryo geliştirilerek, ilave pirina tesislerine hangi bölgede/bölgelerde ihtiyaç olabileceği değerlendirilmiştir. Senaryolar, 2 fazlı pirinanın olduğu haliyle kurutulması ve farklı seviyelerde neminin azaltılması durumunun analiz edilmesini içermiştir. Zeytinyağı işletmelerinin üretimlerini 3 fazlıdan, 2 fazlıya dönüştürmeleri durumunda, oluşacak toplam pirina miktarının 643.000 ton/sezon’dan, 925.000 ton/sezon’a çıkacağı tahmin edilmektedir. Ham 2 fazlı pirinanın olduğu gibi işlenmesi durumunda, mevcut pirina tesislerinde, toplam 670.000 ton/sezon 2 fazlı pirina işlenebileceği ön görülmektedir. Bu durumda, herhangi bir pirina tesisine gönderilemeyen, yaklaşık 230.000-250.000 ton/sezon pirinanın işlenebilmesi için Adana, Aydın, Antalya ve Bursa illerinde birer adet olmak üzere toplam 4 pirina tesisine ihtiyaç olacaktır. Pirina tesislerinde, ham 2 fazlı pirinanın yaklaşık %50’sinin dekantörden geçirilmesi ve neminin azaltılması durumunda, işlenebilecek toplam pirina miktarı 850.000-860.000 ton/sezon değerine yükselecek, bu durumda açıkta kalan pirinaların değerlendirilmesi için Mersin’e bir adet pirina tesisinin kurulması yeterli olacaktır. 2 fazlı prinanın tamamının dekantörden geçirildikten sonra işlenmesi durumunda ise, oluşan pirinanın tamamı mevcut pirina tesislerinde işlenebileceği ve kapasite açısından ilave pirina tesisine gerek olmayacağı belirlenmiştir.
In this study, the competence of the current pomace facilities in case of all 3-phase olive oil mills convert into 2-phase in Turkey was analyzed. For this purpose, three different scenarios were developed and evaluated by using the GIS (Geographical Information System) to assess the necessity for additional pomace facilities. The scenarios included the drying (decantation step) of the 2-phase raw pomace and effect of the humidity reduction of at different levels. It was estimated that in case olive oil enterprises convert their production from 3-phase to 2-phase, the total amount of the pomace to be produced will increase from 643.000 tons / season to 925.000 tons / season. In case of the raw 2- phase pomace was treated in regard to current situation (without any decantation), a total of approximately 670,000 tons/season of raw 2-phase pomace can be processed in current pomace facilities and it has been revealed that a total of 4 pomace facilities will be needed. These facilities are located in Adana, Aydın, Antalya and Bursa in order to process approximately 230,000-250,000 tons of seasoned pomace. In case of about 50% of the raw 2-phase pomace is decanted to reduce the humidity, approximately 850,000-860,000 tons/season 2-phase pomace can be processed, and in this case it is determined that one pomace facilities has to be installed in Mersin in order to process the remaining pomace. Finally, after the whole of the 2-phase pomace is decanted, the capacities of the current pomace facilities are determined to be sufficient for the processing of the formed pomace and there is no need for additional pomace facility in terms of capacity.
