XVII. ve XVIII. yüzyıllarda Balıkesir’de ekmekçi esnafı

Abstract

Bu çalışmada, temel gıda maddelerinden olan ekmek ve onun imalinden sorumlu ekmekçi esnafı üzerinde durulacaktır. Bu bağlamda Osmanlı taşrasında yer alan Balıkesir’de XVII. ve XVIII. yüzyıllarda, ekmekçi esnafının teşkilatlanması, kendi içinde yaşanan sorunlar ve denetleme mekanizması ele alınacaktır. Ayrıca Balıkesir’deki ekmek fırınları, imal edilen ekmek çeşitleri, ekmeğin gramaj ve fiyatları ile toplumsal yaşantı içerisinde ekmekçi esnafının durumunu ortaya koymak amaçlanmaktadır.In this study, one of the staple foods-bread, and baker guilds that are responsible for the production of bread are going to be emphasized. In this point of view, in Balıkesir-situated in Ottoman provinces-organization of baker guilds, problems occurred then and control mechanism in 17th and 18th centuries are going to be discussed. Furthermore, the bakeries in Balıkesir, the kinds of bread produced, weight and prices of bread and the situation of baker guilds in the social life are aimed to be introduced in this study.
