Abstract
Türkiye, dünyadaki bütün ülkeler arasında bal üretiminde önemli yer tutmaktadır. Türkiye' de bal, çoğunlukla süzme bal olarak pazarlanmaktadır. Süzme işlemi, genellikle oda sıcaklığında yapılmaktadır. Bazen, balın petekten süzülmesini kolaylaştırmak için ısıl işlem uygulanmaktadır. Bu durumda sıcaklık uygulanması balın bileşimine etkili olmakta ve kalitesini düşürmektedir. Bu çalışmada, Türkiye'nin iki farklı yöresinden alınan (Erzurum- Bitlis) dört bal numunesinin değişik sıcaklıklara maruz bırakıldıktan ve farklı iki koşulda depolandıktan sonra hidroksimetilfurfural miktarlarındaki değişimler araştırıldı. Bu maksatla,dört adet bal numunesi delikleri 0,5 mm. kare büyüklüğünde bez süzgeçten oda sıcaklığında süzüldü. Her numune beşer adet iki alt grup oluşturacak şekilde on ayrı parçaya bölündü ve kapaklı kavanozlara alındı. Beşerli alt gruplarda birinci kavanozlara ısıl işlem uygulanmazken, ikinci kavanozlar 40°C de 30\üçüncü kavanozlar 55°C'de 30',dördüncü kavanozlar 70°C de 30' ve beşinci kavanozlar 80°C 30' ısıl işleme tabi tutuldu. Her bal numunesine ait ilk beşli grup oda sıcaklığında(25±2°C'de) ikinci beşli grup buzdolabında(+4°C'de) muhafaza edilmeye başlandı. Depolama başlangıcından önce süzülen ve hiç ısıl işlem görmeyen süzülmüş bal numunelerinde HMF miktarı ölçüldü. Depolama başlangıç tarihinden itibaren 30 gün arayla 9 ay boyunca HMF gelişimleri ölçüldü. Bu ölçümler sonucunda HMF miktarındaki gelişmenin otokatalitik olduğu oda sıcaklığında muhafaza edilen ballardaki HMF miktarı belli oranlarda artış gösterirken buzdolabında +4°C'de muhafaza edilen ballardaki HMF miktarları artışlarının çok düşük oranlarda olduğu gözlendi.
Turkey has an important role among the countries of all over the world in honey production. Honey is usually marketed in strained form in Turkey. The straining process is usually carried out at the room temperature. Sometimes heating process is applied to make easy the straining of the honey from the comb,but in this case heating effects badly the composition of the honey and lowers its quality. In this study it has been examined the effects of the four different temperature and two different storage conditions to the amount of hydroxymethylfurfural after applicating different temperatures and storage conditions to the each type of honey collected from two different parts of Turkey. (Erzurum-Bitlis) Four honey samples were prepared by straining the comb honey from the fabric filter which has 0,5 mm square holes at room temperature and stored in closed jars. Each sample has separated in two subgroups to form 10 different sample in it's container. In each 5-group sample, while 1st one wasn'tbeeing applied to heating process, 2nd to 5th ones were heated upto 40, 55, 70 and 80°C separately for 30 minutes. First 5-group sample of each type was kept at room temperature (25±2°C) while the second 5-group sample was beeing kept at 4°C, in refrigerator. Before storage in each sample beeing filtered but nothing HMF amounts were measured. For nine months with 30 day interval, from the date of storage, HMF proceeding of each sample was measured. At the end of test duration, the proceeding of HMF was concluded that it was autocatalytic. While in honey samples beeing kept at room temperature HMF increased in definite amounts, in those beeing kept at 4°C in refrigerator, HMF increased in less amounts than others.
