| dc.description.abstract | Bu araştırma 1996 yılında Agaricus bisporus (Lange) Sing, türüne ait Ul hattında gerçekleştirilmiştir. Çalışma, kültür mantarının (A bisporus L.) muhafaza süresinin kısa olması sebebiyle modifiye atmosfer (MA) ile muhafaza süresini uzatmak ve kullanılan ambalaj materyalinin mantarın bazı kalite kriterleri üzerine etkilerini belirlemek amacıyla yapılmıştır. Hasadı yapılan mantarların tümü 0 + 0.5°C sıcaklık, %90-95 nispi nem şartlarında, düşük yoğunluklu polietilen (LDPE)'in 3 farklı kalınlığa sahip örtü materyalleri ile ambalajlanarak kontrolle beraber muhafazaya alınmışlardır. Bu koşullar altında ürünler üzerinde depolama başlangıcı, 10., 17., 24. günlerde fiziksel ve kimyasal analizler (ağırlık kaybı, solunum hızı, pH, kuru ağırlık, kül, ham sellüloz, protein, hasat sonrası büyümenin tespiti (sap uzunluğu, şapka çapı, şapka açılma oranı), ürün bozulma oranı, genel dış görünüş) yapılmıştır. Muhafaza süresi sonunda mantarlar 20±3°C sıcaklık ve %60±5 nispi neme sahip oda koşullarında 2 gün bekletilmiştir. Bu süre sonunda yukarıda sayılan fiziksel ve kimyasal analizler tekrarlanmıştır. Araştırma sonucunda; Agaricus bisporus (Lange) Sing. Ul hattının MA'de muhafaza süresi sonunda, başlangıçtaki kalitede büyük bir değişim olmaksızın LDPE- 50u uygulamasıyla 24 güne kadar depolanabileceği belirlenmiştir. Ayrıca 2 günlük raf ömrü sonunda da mantarların kalitelerinin korunduğu tespit edilmiştir. Bununla beraber muhafaza ve raf ömrü sonunda ağırlık kayıplarında en düşük değer LDPE-50p, uygulamasından alınmıştır. Mantarlarda hasat sonrası en önemli kalite kriterleri şapka açılma oranı, şapka renginin korunması ve genel dış görünüş olarak bilinir. Bu kalite kriterlerinde en iyi sonucu yine LDPE-50}! uygulaması vermiştir. | tr_TR |
| dc.description.abstract | This study, carried out with Agaricus bisporus (Langel Sing, in line Ul to extend the storage period of the mushrooms in the modified atmosphere (MA) and determine effects of package materials on some quality criteria of the mushrooms. All the harvested mushrooms were packed with low density polyethylene package materials with three different thickness against control and were stored at 0±0.5°C temperature, 90-95% relative humidity conditions. In these conditions, at the begining of storage and at the end of 10, 17, 24 days some physical, chemical analyses as (weight lost, respiration rate, pH, dried weight, ashes, sellulose, protein, growing conditions after harvest (stipe length, cap diameter, cap opening ratio), product spoiling ratio, overall external appearance) were done. At the end of the storage period the mushrooms were kept at 20±3°C temperature and 60 ±5% relative humidity conditions for 2 days. After 2 days the some analyses recurrenced. As a result; it is determined that Agaricus bisporus (Lange) Sing, line Ul could be stored for 24 days without significant changes in the initial quality after the storage period in MA with the application of LDPE-50fi. Moreover in a 2 day shelf life, mushrooms quality were determined to be protected. Moreover, the lowest weight loss was obtained LDPE-50ji application at the end of storage and shelf life periods. It is well known that cap-opening ratio, preservation of cap colour and overall external appearance, as the most important postharvest quality criteria in the mushroom.
