Bursa ilinde meyve suyu sanayinin ekonomik yapısı

Abstract

Türkiye'de meyve suyu-konsantre üretimi son yıllarda çok büyük gelişmeler göstermiş, olup, 1391 yılında 148.300 ton düzeyine ulaşmıştır. Bursa ilinin bu üretimdeki payı "A 45.22 gibi yüksek bir orandadır. Türkiye'deki mevcut meyve suyu-konsantre fabrikalarının 7. 15.62" si Bursa ilinde bulunmaktadır. İlde toplam 5 adet meyve suyu-konsantre isletmesinde 113.253 ton üretim kapasitesi mevcut olup ortalama kapasite kullanım oranı 7. 43.21 olmuştur. Araştırma kapsamındaki işletmelerin meyve suyu-konsantre maliyet yapılarında en büyük payı ambalaj malzemesi almıştır ("/. 24.66). Bunu 7. 21.10 ile hammadde izlemiştir. Araştırma yöresindeki işletmeler için üretim (iş gücü) verimlilik oranı 65.477 Kg/ kişi olarak saptanmıştır, öte yandan, finansal analiz oranlarından cari oranın ortanca değeri 0.98 olarak hesaplanırken kaldıraç oranı 7. 55.80'dir. İncelenen işletmelerde özsermaye kazanç oranı 7. 8.61 olarak belirlenirken işletme sermayesi kazanç oranı 7. 3. 34 olarak saptanmıştır. Meyve suyu-konsantre sanayinde üretim daha çok ihracata sunulmaktadır. Bu sanayide dış pazarlarda çok iyi talep bulunmak tadır. In recent years, fruit.juice-concentrate production has been developed rapidly and in 1991, the production level of Türkiye was reached to 148.300 tons. In this production, Bursa has a big share as 45.22 percent. 19.04 percent of the existent fruit juice-cons-an- trat'e food factories in Türkiye have been located in Bursa. In the province, 5 fruit juice-consantrate plants were investigated and was found that they had 113.253 tons of production capacity and the using average capacity ratio was 43.21 percent. The package material expenses in fruit processing, raw material expenses in fruit.juice processing have the biggest share having the 24 " 66 and 21. 10 percents respectively in the cost structure of fruit juice at the firms studied. It has determined that the labour productivity ratio was 65477 kg/per son. On the other hand, the average value of the current ratio was calculated as 0.9S while the financial leverage ratio was 55.80 percent. At the studied firms the return on net eguity capital ratio was determined as 3. SI percent while the return on capital employed was 3.34 percent. In the fruit juice-concentrate industry, the production was mostly offered to export» There are very good demands at the foreign markets in bhis industry. The market researches concerning these subjects have to be done by making good use of these oppurtunit iss. This situat ion, must be (nor e ef feet ivel v to increase for home consumption.
