Abstract
Bu çalışmanın amacı, Bursa’da tüketime sunulan sığır etlerinde zeranol, dietilstilbestrol (DES), klenbuterol, 17β-östradiol ve testosteron gibi bazı anabolizan maddelerin kalıntılarını tespit etmektir. Numuneler, 2006 yılı Ocak ile Eylül ayları arasında toplandı ve yine aynı dönemde zeranol (n=81), DES (n=80), klenbuterol (n=72), 17β-östradiol (n=29) ve testosteron (n=29) analizleri ELISA tekniği ile yapıldı. Zeranol iki örnekte (%2.5), DES 11 örnekte (%14) ve testosteron üç örnekte (%10) tespit edildi. Örneklerde klenbuterol ve 17β-östradiol tespit edilemedi. Türkiye’de, anabolik maddelerin besi sığırlarında, büyümeyi ve yemden yararlanmayı arttırmak amacıyla kullanımı yasaklanmış olmasına rağmen illegal olarak kullanılabildiği ve saptanan anabolizan maddelerin kalıntılarının halk sağlığı üzerinde olumsuz etkilere yol açabileceği kanısına varıldı.
The aim of the study was to determine anabolic agent residues including zeranol, diethylstilbestrol (DES), clenbuterol, 17β-oestradiol and testosterone in cattle meats consumed in Bursa province. The samples were collected and analysed from January to September of 2006. Zeranol (n=81), DES (n=80), clenbuterol (n=72), 17β-oestradiol (n=29) and testosterone (n=29) residues were analysed by ELISA technique. Zeranol, DES and testosterone were detected in two (2.5%), in 11 (14%) and in three (10%) of meat samples, respectively. Clenbuterol and 17β-oestradiol residues were not detected in any of the samples. It is concluded from the results that although the use of anabolic agents are banned in Turkey, some anabolic agents have been used illegally in beef cattles to improve the growth rate and feed efficiency, and the residues impose risks for public health.
