Abstract
Bu çalışmada, MAP (Modifiye atmosfer paketleme), 1-MCP (1-Metilsiklopropen) ve MAP+1-MCP gibi hasat sonrası uygulamaların ‘Maraton F1’ çeşidi brokolilerin muhafaza süresi ve ürün kalitesi üzerine etkileri araştırılmıştır. Bu amaçla 20 μ LDPE (Düşük yoğunluklu polietilen) örtü içerisindeki brokoliler, 0±1oC sıcaklık ve %90±5 oransal nem koşullarında 70 gün süreyle muhafaza edqlmqştqr. Ayrıca raf ömrü durum tespqtq amacıyla örnekler muhafaza süresqne ek olarak 20±2oC sıcaklık ve %60±5 oransal neme sahqp oda koşullarında 4 gün süre qle bekletqlmqştqr. Muhafaza süresqnce ve raf ömrü sonunda alınan örneklerde ağırlık kaybı, taç rengi, SÇKM, pH, TA, askorbik asit, klorofil miktarı, pazarlanabilirlik durumu analqzlerq yapılmıştır. Çalışma sonucunda, MAP uygulamaları Kontrol uygulamalarına göre daha başarılı bulunurken, MAP+1-MCP koşullarındakq örneklerden Ağırlık Kaybı, Pazarlanabqlqrlqk Durumu parametlerqnde başarılı sonuçlar elde edqlmqştqr.
In this study, the effects of MAP (Modified atmosphere packaging),1-MCP (1-Methylcyclopropene) and MAP+1-MCP on the storage time and product quality of Marathon F1 broccoli were investigated. For this purpose, broccoli in 20 μ LDPE (Low Density Polyethylene) cover were kept for 70 days at 0 ± 1oC temperature and 90 ± 5% relative humidity. In addition, samples were kept for 4 days in room conditions with 20 ± 2 °C temperature and 60 ± 5% relative humidity in addition to the storage period for shelf life determination. Weight loss, crown color, TSS, pH, TA, ascorbic acid, chlorophyll content, marketability were analyzed in samples taken during storage and at the end of shelf life. As a result of this study, MAP applications were found to be more successful than Control applications, while the results of MAP+1-MCP conditions were successful in Weight Loss, Marketability Status parameters.
