Abstract
Türkiye'de süt ve süt ürünleri üretimi, san yıllarda önemli bir artış göstermemiştir. 1994 yılında süt üretimi 10.562.000 ton düzeyinde gerçekleşmiştir. Bursa ilinin bu üretimdeki payı ise 7. 2.75 dolayında olmuştur. Türkiye'deki mevcut süt ve süt ürünleri fabrikalarının 7. 5. 88' i Bursa ilinde bulunmaktadır. Araştırma kapsamındaki toplam 7 adet süt ve süt ürünleri işletmesinde 129.400 ton üretim kapasitesi mevcut olup ortalama kapasite kullanım aranı 7. 62.57 olmuştur. Araştırma kapsamındaki işletmelerin süt ürünlerinin maliyet yapılarında hammadde en büyük payı almıştır. Hammaddenin üretim giderleri içindeki payı terayağında 7. 86.90, pastörize sütte 7. 84.70, kaşar peynirinde 7. 74.70, yoğurtta 7. 75.10 ve beyaz peynirde ise 7. 57.30 olmuştur. Diğer yandan, f inansal analiz oranlarından cari oranın ortanca değeri 2.14 alarak hesaplanırken, kaldıraç oranı 7. 73.14 olarak bulunmuştur, incelenen işletmelerde öz sermaye kazanç oranı 7. 26.85 olarak belirlenirken işletme sermayesi kazanç oranı 7. 11.06 olarak bulunmuştur. İnsan beslenmesinde önemli bir gıda maddesi olan süt ve ürünleri Türkiye' de halkın ihtiyacına yetecek miktarda üretilmemektedir. Bu nedenle gerçekte Türkiye, süt ve ürünlerinde önemli bir arz açığı ile karşı karşıya bulunmaktadır. Bunun sonucu alacakta bu ürünlerde giderek önemli miktarda ithalat ağırlık kazanmakta dır. Sonuç, Türk insanının bir dağa harikası ve en mükemmel besin elementleri kokteyli olan sütten yeterince yararlanamadığı gerçeğini ortaya çıkarmaktadır.
In recent years, milk and milk products industry has shown stable trend in Turkey. The production level of milk was reached to 10.562.000 tons, in 1994. In this production, Bursa has a share as 2.75 percent. 5.38 percent of the existent milk and milk products -factories in Turkey have been located in Bursa. In the province, 7 milk and milk products -firms were investigated and it was -found that they had 129.400 tons of production capacity and the average rates of capacity utilisation was 62.57. Raw - material expenses, in milk and milk products processing have the biggest share having the 86.90, 84.70, 74.70, 75.10 and 57.30 percents respectively in the cost structure of the butter, pasteurised milk, cheddar, yoghurt and white cheese. On the other hand, the median value of the current ratio was calculated as 2.14 while the financial average ratio was 73.14 percent. At the studied firms the return on net equity capital ratio was determi ned as 26.85 percent while the return on capital employed was 11.06 percent. Milk and milk products have an importance in human life and the production of milk and milk products are not enough to peoples demand. Therefore, it is a fact that Turkey has a deficiency prob lem in milk and milk products supply. Consequently, step by step, imparts in milk and milk products get an important to fit the consumers' demand. Unfortunately, Turkish consumer cannot enough consume these products, however milk products ara the best food for people.
