Abstract
Türkiye'de dondurulmuş meyve sebze üretimi son yıllarda çok büyük gelişmeler göstermiş olup . 1993 yılında 51558 ton düzeyine ulaşmıştır. Bursa ilinin bu üretimdeki payı %54.4 gibi yüksek bir orandadır. Türkiye'deki mevcut dondurulmuş gıda fabrikalarının %42'si Bursa ilinde bulunmaktadır. İlde toplam 7 adet dondurulmuş gıda işletmesinde 99300 ton üretim kapasitesi mevcut ohıp ortalama kapasite kullanım oram %43.95 olarak bulunmuştur. Araştırma kapsamındaki işletmelerin dondurulmuş meyve sebze maliyet yapılarında hammadde en büyük payı almıştır. Dondurulmuş meyve maliyetinde hammaddenin payı %57.25, dondurulmuş sebze maliyetinde ise %45.34 olarak bulunmuştur. Araştırma yöresindeki işletmeler için üretim (işgücü) verimlilik oram 15666 kg/kişi olarak saptanmıştır. Öte yandan, finansal analiz oranlarından cari oranın ortanca değeri 1.79 olarak hesaplanırken kaldıraç oram %34.91 dir. İncelenen işletmelerde özsermaye kazanç oram %12.27 olarak belirlenirken işletme sermayesi kazanç oram %3.34 olarak saptanmıştır. Dondurulmuş gıda sanayinde üretim daha çok ihracata sunulmaktadır. Bu sanayide dış pazarlarda çok iyi talep bulunmaktadır. Konu ile ilgili pazar araştırmalarının yapılıp bu olanakların geliştirilmesine çalışılmalıdır. Bu aşamada iç tüketimin de artırılması için etkili çalışılması gerekmektedir.
In recent years, frozen fruit and vegetables industry has been developed rapidly and in 1993, the production level of Turkey was reached to 51558 tons. In this production, Bursa has a big share as %54.4 percent. %42 percent of the existent frozen food factories in Turkey have been located in Bursa. In the province, 7 frozen food plants were investigated and it was föund that they had 93300 tons of production capacity and the using average capacity ratio was 43.95 percent. The raw material expenses in frozen fruit and vegetables processing have the biggest share having the 57.25 and 45.34 percents respectively in the cost structure of the frozen food at firms studied. It has determined that the labour productivity ratio was 15666 kg/person. On the other hand, the average value of the current ratio was calculated as 1.79 while the financial leverage ratio was 34.91 percent. At the studied finns the retum on net equity Capital ratio was determined as 12.27 percent while the retum on Capital employed was 3.34 percent. In the frozen food industry, the production was mostiy offered to export. There are very good demands at the foreign markets in this industry. The market research.es conceming these subjects have to be done by making good use of these opportuniti.es. This situation, must be more effectively to increase for domestic consumption.
