Sebze işleme sanayiinde hammadde temini alternatiflerinin finansal analizi

Abstract

Ekonomisinin temelinin hala taran sektörünün oluşturduğu ülkemizde gıda sanayiinin gelişimi Türk tarımı için çok önemlidir. 1963'ten beri 5 yıllık kalkınma planlarıyla pek çok şekilde desteklenmesine rağmen gıda sanayi arzu edilen seviyeye ulaşamamıştır. Gerekli bilgilere çok zor ulaşılmasına rağmen, gıda sanayiinde besin maddelerini işleme oram karşılaştırıldığında ülkemizde %10-20'ye karşılık, dünyada %60 oranında olduğu söylenebilir. Gıda sanayiinin gelişimi ile ilgili daha birçok önemli sorun vardır. Sanayi tarafından belirlenen en önemli sorun hammadde teminidir. Güvenilir bir gıda sanayiinde öncelikli koşul, hammaddenin devamlılığı, güvenilirliği ve yeterli miktarda olmasıdır. Bu çalışmada ülkemizin sebze işleme sanayiinde önemli bir bölgesi olan Bursa ilinde faaliyet gösteren bir sebze işleme tesisinin uygulamaları ve bilgileri temel alınarak hammadde temini alternatifleri araştırılmıştır. Bu çalışmada bölgede sözleşmeli tarım ve serbest alım en çok kullanılan temin alternatifleri olarak bulunmuştur. Hammadde temin alternatiflerinin kullanımı temel olarak ürün karakteristiğine ve üretim yöntemlerine göre değişmektedir. Örneğin bamya ve karnabaharda piyasadan serbest alım maliyetleri %22 ve %41 oranında etkilemiş, düşürmüştür.

Financial Analysis of Raw Material Procurement System in the Vegetable Processing Industry in Turkey Development of the food industry is very important for the Turkish agriculture and also whole economy which is still characterized as agriculture based one. Despite several incentives devoted to the sector in the five-year development plans since 1963, food industry has not reached the desired level. Although it is difficult to find reliable dta, it could be said that the share of food supplied through procesing is 10-20 %, as compared to 60 % in the developed world. There are rather serious problems concerning the development of the food industry. The most important one, as defined by the industry, is raw material procurement problem. One of the important pre-conditions for the development of a sound food industry is providing continuous, safe and ample raw materials. In the study the of raw material procurement systems in the vegetable processing industry in Turkey has been investigated based on the available data and information besides a field survey concerning with a processing industry of Turkey. In the studied region it was found that among the others, contract farming and the spot market are the widely used procurement alternatives. The use of the alternative is mainly based on product characteristics and production methods. For example in okra and cauliflower procurement spot market alternative is found rather cost effective having 22% and %41 lower transaction costs respectively.
