Abstract

This study was carried out in order to determine knowledge level about hygiene-sanitation of food handlers working in food section of discount stores and supermarkets which can be qualified as big convenience stores in and around Bursa. A survey form composed of 10 questions was applied to 149 food handlers who were assigned unbiased with simple random sampling method and who participated in the study voluntarily. Gender of employee and their training about hygiene-sanitation were determined as independent variables. The correct answers given for the questions; "Soap kills bacteria while washing hands", "Cheese can be packaged with bare hands", "Store manager should be informed about diseases such as flu, cold, diarrhea" were respectively 4.7, 38.9 and 13.4%. It was determined that answers given for the question only above were meaningful statistically according to both gender and receiving training previously. As a result, it was determined that hygiene-sanitation level of food handlers were quite low. © Medwell Journals, 2013.
