Abstract
Bu tez çalışması, Jersey ırkı ineklerde kuru madde tüketimi, süt verimi ve yağ asitlerinin mevsimsel değişimini incelemek amacıyla düzenlenmiştir. Çalışma kapsamında, Ağustos ve Aralık aylarında süt örnekleri toplanarak lipid analizine tabii tutulmuş ve süt örneklerinin yağ oranları belirlenmiştir. Yağ asidi kompozisyonları ise gaz kromotografisi ile saptanmıştır. Elde edilen bulgular, doymuş yağ asitleri, tekli doymamış yağ asitleri ve tekli doymamış yağ asitleri/doymuş yağ asitleri oranlarının mevsimlerden önemli düzeyde etkilenmediğini göstermiştir (P>0.05). Bununla birlikte, çoklu doymamış yağ asitleri içeriği ve çoklu doymamış yağ asitleri/doymuş yağ asitleri oranının mevsimlerden önemli düzeyde etkilendiği tespit edilmiştir (P<0.05). İnsan sağlığı açısından kritik öneme sahip Aterojenik ve Trombojenik indekslerin ise mevsimlerden önemli düzeyde etkilenmediği belirlenmiştir (P>0.05). Hayvanların laktasyon boyunca süt verimi ve kuru madde tüketimlerinde sıcaklık etkisine bağlı olarak kış mevsiminde istatsistiksel olarak anlamlı bir artış gözlenmiştir (P<0.05). Sonuç olarak, literatürde insan sağlığı üzerinde olumlu etkileri olduğu bildirilen doymamış yağ asitleri oranının, özellikle çoklu doymamış yağ asitleri oranının, yaz aylarında (Ağustos) elde edilen sütlerde anlamlı düzeyde daha yüksek olduğu tespit edilmiştir.
The aim of this thesis study was to investigate the seasonal variation of dry matter consumption, milk yield and fatty acids in Jersey breed cows. Within the scope of the study, milk samples were collected in August and December and subjected to lipid analysis and milk fat ratios were determined. Fatty acid compositions were analyzed by gas chromatography. The results showed that saturated fatty acids, monounsaturated fatty acids and monounsaturated fatty acids/saturated fatty acids ratios were not significantly affected by the seasons (P>0.05). However, polyunsaturated fatty acids content and polyunsaturated fatty acids/saturated fatty acids ratio were significantly affected by the seasons (P<0.05). Atherogenic and Thrombogenic indices, which are critical for human health, were not significantly affected by the seasons (P>0.05). During lactation, a statistically significant increase in milk yield and dry matter intake was obseved in the winter season, attributed to the effects of temperature. As a result, it was determined that the ratio of unsaturated fatty acids, especially polyunsaturated fatty acids, which are reported to have positive effects on human health in the literature, was significantly higher in the milk obtained in summer (August).
