| dc.description.abstract | Türkiye'de meyve sebze kanser ve üretimi son yıllarda çok büyük gelişmeler göstermiş olup 1990 yılında 69000 ton düzeyine ulaşmıştır. Bursa ilinin bu üretimdeki payı %59.26 gibi yüksek bir orandadır. Türkiye'deki mevcut meyve sebze konserve fabrikalarının % 26. 92'si Bursa ilinde bulunmaktadır. İlde toplam 6 adet meyve sebze konserve isletmesinde 79059 ton üretim kapasitesi mevcut olup ortalama kapasite kullanım oranı %54.67 olmuştur. Araştırma kapsamındaki isletmelerin konserve maliyet yapılarında, sebze konservelerinde ambalaj malzemesi, meyve konservelerinde ise hammadde en büyük payı almıştır. Söz konusu giderlerin maliyetler içerisindeki payları sırasıyla % 23.79 ve % 24.00 olmuştur. Araştırma yöresindeki isletmeler için üretim (işgücü) verimlilik oranı 56763 kg /kişi olarak saptanmıştır. Öte yandan finansal analiz oranlarından cari oranın ortanca değeri 1.67 olarak hesaplanırken kaldıraç aranı % 55.80'dir. İncelenen işletmelerde özsermaye kazanç oranı '%8.05 olarak belirlenirken isletme sermayesi kazanç oranı % 3.34 olarak saptanmıştır. Meyve sebze konserve sanayinde üretim daha çok iç tüketime sunulmaktadır. Sebze konservelerinde Türk damak zevkine yakın ülkelerle çalışma yoluna gidilmelidir. Meyve konservesinde ise dış pazarlarda çok iyi talep bulunmaktadır. Konu ile ilgili pazar araştırmalarının yapılıp bu olanaklardan yararlanılmaya çalışılmıştır. | tr_TR |
| dc.description.abstract | In recent years, fruit and vegetable canned industry has been developed rapidly and in 1990, the production level of Turkey was reached to 65000 tons,, In this production, Bursa has a big share as 59.26 percent. 26.92 percent of the existant fruit vegetable canned food factories in Turkey have been located in Bursa. In the province, 6 fruit and vegetable canned plants were investigated and it was found that they had 79059 tons of production capacity and the using average capacity ratio was 5467 percent. The package material expenses in vegetable processing, raw material expenses in fruit processing have the biggest share having the 23.79 and 24.00 percents respectively in the cost structure of the canned food at the firms studied. It has determined that the labour productivity ratio was 56763 kg /person. On the other hand, the average value of the current ratio was calculated as 1.67 while the financial leverage ratio was 55.8O persent, At the studied firms the return on net equity capital ratio was determined as 8.05 percent while the return on capital employed was 3.34 percent. In the fruit and vegetable canned industry, the production was mostly offered to home consumption. In the vegetable canned food industry, we have to work to the countries whose palate pleasure likes ours. There are very good demands at the foreign markets in the fruit canned food The market researches concerning these subjects have to be done and we must make good use of these opportunities. | en_US |
