Abstract
Bu araştırma, Bursa ili merkezinde tüketime sunulan meyveli dondurmaların bileşimini ve mikrobiyolojik kalitesini saptamak amacıyla yap ildi. Çalışmada, limonlu dondurma, vişneli dondurma ve çilekli dondurma kullanıldı. Meyveli dondurma örneklerinde, mikrobiyolojik, kimyasal ve istatistiksel analizler yapıldı ve kalite kriterleri belirlendi. üzerinde çalışılan meyveli dondurma örneklerinin genellikle hijyenik kalitelerinin istenen düzeyde olmadığı görülmüş, ayrıca meyveli dondurmaların kimyasal bileşiminde bazı farklılıklar ortaya çıkmıştır.
This research was made in order to determine.the- 'microbioloqical quality and content of -fruit ice cream presenting to consumption" in Bursa. In this study, lemon ice; cream, cherry ice cream and strawberry ice cream were used. In the -fruit ice cream samples, microbiological, chemical and statistical analysis were made and then the quality criteria were determined. This study showed that hygenic quality of the investigated -fruit ice cream samples were i nadqeuate. In addition, some differences were seen in chemical content of fruit ice cream.
