| dc.description.abstract | Günümüzde giderek artan nüfusun sağlıklı olarak beslenmesi giderek sorunlu duruma gelmiştir. Bu sorunlar, yeterli besin maddelerinin temininde karşılaşılan güçlükler yanında, varolan besin veya besin hammaddelerinin bileşimine katılan olumsuz etkili maddelerden kaynaklanmaktadır. Besinlerde tüketici sağlığını olumsuz etkileyen kirlenmelerden biri de mikotoksinlerdir. Mikotoksinler küflerin oluşturduğu ikincil metabolizma ürünleridir. Böylece gıda ve gıda hammaddelerinde küf ve küflenme giderek artan önem kazanmış ve çok sayıda araştırmaya konu olmuştur. Bu çalışmada konunun önemi dikkate alınarak, Bursa İl Merkezinde satışa sunulan gıdalardaki küfler araştırılmıştır. Bunun için yoğurt, peynir, sucuk, ekmek, un, hamburger ekmeği, salep, hurma, çay, cevizli helva, kestane şekeri, rus salatası ve su olmak üzere toplam 25 örnek incelenmiştir. Bu örneklerden 44 küf susu izole edilmiş, bunun 43 tanesinin tanısı yapılmıştır. Bu küf suşları 11 cins ve 22 türe sınıflandırılmışlardır. Bunlar Aspergillus niger, A. parasiticus, A. oryzae, A. funiculosııs, A. penicilloides; Penicillium auranüogriseum, P. roquefor/ii, P. rugulosum, P. verrucosum; Cladosporium cladosporoides, C. macrocurpuın, C. sphaerospermum; Fusarium culmorum; Absidia corymbiferum; Alternaria alternata; Mucor hiemalis, M. racemosus; Paecilomyces variotii; Rhizopus oryzae, R. stolonifer Scopulariopsis Candida ve Verticillium lecanii'dk. Bazı et ve süt ürünleri de dahil, büyük çoğunlukla günlük besinlerimizden oluşan gıda örneklerinde mikotoksin oluşturduğu bilinen cins ve türlere rastlanması ve gıdalarda küflerin yaygın olması tüketici sağlığı yönünden düşündürücüdür. Zaman geçirmeden gerekli önlemlerin alınması kaçınılmazdır. | tr_TR |
| dc.description.abstract | Today in the eating conditions of nutrition of increasing population had problems. These problems come beeing able to have sufficient foods and having foods or some additives which have negatif effects to the composition of foods. Mycotoxins in food have a negative effect on the consumers health. Mycotoxins are secondary metabolites that are produced by molds. Hence, mold and molding had been getting very important subjects for researches in the foods and raw materials. In this research, the molds are found in the foods sold in Bursa were investigated. For this reason, 25 examples were investigated totaly and these samples were yougurt, cheese, sucuk (Turkish sausage), bread, flour, hamburger slice, salep, date, tea, helva with walnut, chestnut (candied), mayonnaise with salad and water. 44 mold varieties were isolated and 43 mold spcies were identified in these samples. These molds were classified in II genus and 22 species. These are Aspergillus niger, A. parasiticus, A. oryzae, A. funiculosus, A. penicilloides; Penicillium aurantiogriseum, P. roquefortii, P. rugulosum, P. verrucosum; Cladosporium cludosporoides, C. macrocarpum, C. sphaerospermum; Fusarium culmorum; Absidia corymbiferum; Alternaria alternata; Mucor hiemalis, M. racemosus; Paecilomyces variotii; Rhizopus oryzae, R. stolonifer; Scopuluriopsis Candida and Verticillium lecanii Coming accros to some mold genus and species, they produced mycotoxins in the meat and milk products that are consumed daily, got worried in aspect of consumers health. It could be necesssary to take precautions related to these problems. | en_US |
