Abstract

Bu çalışmada, materyal olarak Sprinter bezelye çeşidi, Nantes havuç çeşidi ve Granola patates çeşidi kullanılmıştır. Hammadde haşlanmış ve iki farklı oranda karıştırılarak hazırlanmıştır. Paçal A % 40 Bezelye, % 35 Havuç, % 25 Patates Paçal B % 30 Bezelye, % 30 Havuç, % 40 Patates Ürünler 720 cc'lik cam kavanozlara doldurularak, üzerlerine 4 farklı çeşit dolgu sıvısı, 85-90 °C sıcaklıkta ilave edilmiştir. 1 No'lu Dolgu Sıvısı : % 1 Tuz, % 0.2 sitrik Asit 2 No'lu Dolgu Sıvısı : % 1 Tuz, % 0.1 Sitrik Asit, % 0.1 Askorbik Asit 3 No'lu Dolgu Sıvısı : % 1 Tuz, % 0.1 Sitrik Asit, % 0.1 Askorbik Asit, % 0.2 Kalsiyum Klorür. 4 No'lu Dolgu Sıvısı : % 1 Tuz, % 0.1 Sitrik Asit, % 0.1 Askorbik Asit, % 0.2 Kalsiyum Klorür, %0.1EDTA Kavanozlara uygulanan sterilizasyon normları aşağıdaki gibidir. 118°C'de30ve35Dak. 121 °C'de 20 ve 25 Dak. İşlem tamamlandıktan sonra kavanozlar 30-35 °C'ye kadar soğutulmuştur. Kavanozlar 4 ay depolanmış ve depolama sonunda fiziksel, kimyasal ve duyusal analizler yapılmıştır. Yapılan analizler sonucunda garnitür konservesi üretiminde Paçal A karışım oranının, Paçal B karışım oranına göre biyolojik değer yönü ile daha iyi olduğu sonucuna varılmıştır. Konservelerde materyallerin renkleri askorbik asit ve sitrik asit tarafından muhafaza edilmiş, sebze dokusu kalsiyum klorür tarafından sertleştirilmiş, renk, görünüş ve yapı EDTA tarafından korunmuştur. 118 °C de 35 dakika sterilize edilen örnekler kalite kriterlerini korumuşlardır. Bu çalışma ile garnitür konservesi üretiminde sanayinin yaşamakta olduğu problemler çözülmeye çalışmış, taslak halinde olan garnitür konservesi standardının sanayi ölçütünde değerlendirilmesine ve yorumlanmasına yardımcı olmak amaçlanmıştır. Ayrıca tek tek konserve değeri olmayan patates ve havuç gibi temel besinlerimiz konserveye işlenerek, mevcut klasik konservelerin çeşitlendirilmesi sağlanarak, işletmelere kış mevsiminde de üretim yapma alternatifi sunulmuştur.
In this study, Sprinter Pea variety, Nantes carrot variety and Granola potato variety have been used as material. The raw materials have been blanched and mixed as two different propotion mixtures. Proportion A % 40 Peas, % 35 Carrot, % 25 Potato Proportion B % 30 Peas, % 30 Carrot, % 40 Potato The products filled into 720 cc glass jard and 4 different kinds of brine were added to them at 85-90 °C. Brine No-1: % 1 Salt, % 0.2 Citric Acid Brine No-2: % 1 Salt, % 0.1 Citric Acid, % 0.1 Askorbic Acid Brine No-3: % 1 Salt, % 0.1 Citric Acid, % 0.1 Ascorbic Acid, % 0.2 Calcium Chloride Brine No-4: % 1 Salt, % 0.1 Citric Acid, % 0.1 Ascorbic Acid, % 0.2 Calcium Chloride, % 0.1 EDTA (Ethylendiamine tetraaceticacid). The sterilization norms for the jars are as follows: 118 °C 30 and 35 minutes 1 2 1 °C 20 and 25 minutes After being processed, the jars were cooled to 30-35 °C. Physical and chemical analyses of the stored jars were made after a four month period. As conclusion of these analyses it was found that proportion; (A) is better than proportion (B) as biological value to canned food production; the color of the materials were effected by CaCl2 and color, appearance and textural qualities of the materials were stabilized by EDTA; the samples which were sterilized at 118 °C for 35 minutes, protected their quality criterions. With this study we tried to solve the problems of the garniture product industry; the standard of garniture canned food has been evaluated and helped to be explained with the criterions of industry, which is now at the stage of preliminary study. Also, our basic foods, which induvidually have no value for canned food can be increased in variety and give opportunity to canneries for winter production.
