Abstract
Oleuropein is the main phenolic compound of olive tree and is responsible for the characteristic bitterness of olive fruits. Olive fruits can only be consumed after brining which removes bitterness by leaching out oleuropein and other polyphenols. Oleuropein is a heterosidic ester of elenolic acid and hydroxytyrosol and possesses beneficial effects on human health. Many researchers have demonstrated this compound has antimicrobial property, so that it might be used as an alternative food additive. In this review, the studies about chemical structure and antimicrobial activity of oleuropein are mentioned.
