Bursa ilinde domates salçası üretiminin ekonomik yapı ve sorunları

Abstract

Türkiye'deki domates salçası üretimi son yıllarda çok büyük gelişmeler göstermiş olup 1990 yılında 289295 fort düzeyine ulaşmıştır. Bursa ilinin bu üretimdeki payı % 54.76 gibi yüksek bir orandadır. Türkiye'deki mevcut salça fabrikalarının % 31'i Bursa ilinde bulunmaktadır. İlde toplam 11 adet salça işletmesinde 302040 ton salça üretim kapasitesi mevcut olup, bu kapasite ildeki toplam salçalık domates üretimi nin üzerinde bulunmaktadır. Araştırma alanı olar Bursa ilinde sanayi tipi domates üretiminin büyük bir bölümü sözleşmeli üretim şeklinde yürütülmektedir. Sözleşme koşullarında üretici açısından bazı sorunlar bulunmaktadır. Salça sanayinde üretim daha çok dış pazarlara satış imkanlarına göre belirlenmektedir. Bununla beraber ambalaj malzemesi maliyetinin yüksek oluşu, kalitesinin yetersizliği dış satımda sorunlar yaratmaktadır. Önemli bir pazar durumundaki Atın dış alımda koyduğu kotalar da diş satımcılan olumsuz yönde etkilemektedir.

In recent years tomato paste industry has been developed rapidly and tomato paste production of Turkey reached to 289295 tons level in 1990. Bursa Province has a rather important share with 54.76 % in this production amour. Almost 37.00 % of the tomato paste plants of Turkey has been located in the Bursa province having about 302040 tons tomato paste production capacity which is above the field tomatoes production for industry in the Bursa. Field tomatoes production in Bursa Province mostly was carried our under contract farming which has some serious problems from the farmers point of interest. Tomato paste industry has been developed rather to meet foreign demand. However this sector has serious difficulties in export such as high cost and quality problems of packing material. Imports quotas of European Community which is an important market, have been also affecting exporters in a negative way.
