Abstract

Bu araştırmada 36 farklı septik paketlenmiş meyve suyu örneğinin fiziksel ve kimyasal bileşimi ile mikrobiyolojik özellikleri incelenmiş ve sonuçlar alt ve üst sınır değerler esas alınarak ilgili Türk Standartları (TSE) ve bu konuda yapılmış başlıca literatürler ile karşılaştırılmıştır. Aseptik paketlenmiş meyve suyu örneklerinde fiziksel ve kimyasal olarak; suda çözünür katı madde» pH değeri, toplam kura madde, toplam kül, toplam titre edilebilir asit, formol sayısı, toplam ve indirgen şeker, sakkaroz, hidroksimetilfurfural (HMF), askorbik asit (sadece portakal nektarlarında) ve koruyucu madde ön testi, mikrobiyolojik olarak; toplam mezofilik aerobik bakteri, toplam maya ve küf, laktik asit bakterisi ve kotiform bakteri analizleri yapılmıştır, fiziksel ve kimyasal bulgular istatistiksel analizlerle değerlendirilmiştir. Aseptik paketlenmiş kayısı nektarlarında fiziksel ve kimyasal analizler sonucunda; suda çözünür katı madde (%) : 12.75-14.00 (ort: 13.44+0.24), pH : 3.46-4.08 (ört: 3.71±0.20), toplam kuru madde (%) : 13.13-14.57 (ort: 13.85±0.26), toplam kül (g/L) : 1.11-3.62 (ort: 2.20±0.57), toplam asillik (%) : 0.45-0.66 (ort: 0.55±0.05), formol sayısı : 4.0-7.6 (ort: 5.8±0.73), toplam şeker (g/L) : 68.80-116.88 (ort: 93.86+6.65), indirgen şeker (g/L) : 24.96-96.88 (ort: 64.65+17.67), sakkaroz (g/L) : 3.95-76.08 (ort: 27.75±20.72), HMF (mg/L) : 0.0-4.3 (ort: 2.1±1,05) olarak bulunmuş ve koruyucu maddeye rastlanmamıştır. Aseptik paketlenmiş vişne nektarlarında fiziksel ve kimyasal analizler sonucunda; suda çözünür katı madde (%) : 12.50-14.25 (ort: 13.31±0.36), pH : 3.09-3.45 (ort: 3.23±0.12), toplam kuru madde (%) : 12.80-14.48 (ort: 13.57±0.35), toplam kül (g/L) : 0.62-1.56 (ort: 1.19±0.21), toplam asitBk (%) : 0.64-0.87 (ort: 0.75±0.04), formol sayısı : 4.8-10.0 (ort: 6.2±0.93), toplam şeker (g/L) : 84.40-112.56 (ort: 102.08±5.77), indirgen seker (g/L) : 58.80-95.84 (ort: 71.40±5.81), sakkaroz (g/L) : 4.94-48.03 (ort: 29.15+7.63), HMF (mg/L) : 0.5-3.5 (ort: 2.2±0.79) olarak bulunmuş ve koruyucu maddeye rastlanmamıştır. Aseptik paketlenmiş portakal nektarlarında fiziksel ve kimyasal analizler sonucunda; suda çözünür katı madde (%) : 10.75-12.50 (ort: 11.75+0.48), pH :ü 330-3.88 (ort: 3.52±0.19), toplam kuru madde (%) : 11.36-12.80 (ort: 12,20±0.38), toplam kül (g/L) : 1.17-3.61 (ort: 2.66±0.65), toplam asitlik (%) : 0.70-1.08 (ort: 0.82±0.07), formol sayısı : 8.4-22.0 (ort: 12.9±5.12), toplam şeker (g/L) : 63.80- 102.08 (ort: 87.40±11,0Ö), indirgen şeker (g/L) : 25.92-80.24 (ort: 59.65±13.74), sakkaroz (g/L) : 5.93-66.42 (ort: 26.29±6.38), HMF (mg/L) : 0.CM.2 (ort: 2.6±1.20), askorbik asit (mg/L) : 225-350 (ort: 277±32.75) olarak bulunmuş ve koruyucu maddeye rastlanmamıştır. Vişne nektarlarının %41.7'sinin toplam titre edilebilir asitlik ve formol sayısı yönüyle, portakal nektarlarının %33.3'ünün ve kayısı nektarlarının %59.3'ünün ise formol say»» ve suda çözünür katı madde yönüyle ilgili standartlarda belirtilmiş olan limit değerlere uygun olmadığı görülmüştür. İncelenen meyve sularının hiçbirinde toplam mezofilik aerobik bakteri, maya ve küf, laktik asit bakterisi ve koliform grubu bakterilerinin gelişimine rastlanmamıştır.
The physical and chemical composition and microbiological properties of 36 different aseptic packaged fruit juice samples were evaluated and the results were compared to the Turkish Standards and the main literatures on the basis of range values. Aseptic packaged fruit juice samples as physical and chemical; soluble solids, pH value, total dried substance, total ashes, total titratable acids, formol number, total and invert sugar, saccharose, hydroxymethylfurfiiral (HMF), ascorbic acid (only in orange nectars) and preservative substance, as microbiological; total mesophilic aerobic bacteria, total yeasts and moulds, lactic acid bacteria and coliform bacteria were examined and all the data were statistically analyzed. The variations in the physical and chemical properties of aseptic packaged apricot nectars used in the present study were found as follows: soluble solids (%) : 12,75-14,00 (average: 13,44±0,24), pH value : 3,46-4,08 (average: 3,71+0,20), total dried substance (%) : 13,13-14,57 (average: 13,85+0,26), total ashes (g/L) : 1,11- 3,62 (average: 2,20±0,57), total titratable acids (%) : 0,45-0,66 (average: 0,55±0,05), formol number : 4,0-7,6 (average: 5,8±0,73), total sugar (g/L) : 68,80- 116,88 (average: 93,86±6,65), total invert sugar (g/L) : 24,96-96,88 (average: 64,65+17,67), saccharose (g/L) : 3,95-76,08 (average: 27,75±20,72), HMF (mg/L) : 0,0-4,3 (average; 2,1+1,05) and preservative substances were not found in the apricot nectars. The variations in the physical and chemical properties of aseptic packaged sour cherry nectars used in the present study were found as follows: soluble solids (%) : 12,50-14,25 (average: 13,31+0,36), pH value : 3,09-3,45 (average: 3,23+0,12), total dried substance (%) : 12,80-14,48 (average: 13,57+0,35), total ashes (g/L) : 0,62-1,56 (average: 1,19+0,21), total titratable acids (%) : 0,64-0,87 (average: 0,75+0,04), formol number : 4,8-10,0 (average: 6,2+0,93), total sugar (g/L) : 84,40-IV 112,56 (average: 102,08±5,77), total invert sugar (g/L) : 58,80-95,84 (average: 71,40±5,81), saccharose (g/L) : 4,94-48,03 (average: 29,15±7,63), HMF (mg/L) : 0,5- 3,5 (average: 2,2+0,79) and preservative substances were not found in the sour cherry nectars. Hie variations in the physical and chemical properties of aseptic packaged orange nectars used in the present study were found as follows: soluble solids (%) : 10,75-12,50 (average: 11,75±0,48), pH value : 3,30-3,88 (average: 3,52±0,19), total dried substance (%) : 11,36-12,80 (average: 12,20±0,38), total ashes (g/L) : 1,17-3,61 (average: 2,6610,65), total titratable acids (%) : 0,70-1,08 (average: 0,82±0,07), formol number : 8,4-22,0 (average: 12,9±5,12), total sugar (g/L) : 63,80- 102,08 (average: 87,40±11,00), total invert sugar (g/L) : 25,92-80,24 (average: 59,65±13,74), saccharose (g/L) : 5,93-66,42 (average: 26,29±6,38), HMF (mg/L) : 0,0-4,2 (average: 2,6±1,20), ascorbic acid (mg/L) : 225-350 (average: 277±32,75) and preservative substances were not found in the orange nectars. It was determined that %41,7 of sour cherry nectar samples as total titratable acid and formol number, %33,3 of orange nectar samples and %59.3 of apricot nectar samples as formol number and soluble solids were not suitable to Turkish Standards. Growth of total mesophilic aerobic bacteria, total yeasts and moulds, lactic acid bacteria and conform bacteria were not observed in all of aseptic packaged fruit juices.
