Abstract
Türkiye sahip olduğu zeytin ağacı varlığı ile dünyanın önemli zeytin üreticisi ülkeleri arasındadır. Sofralık zeytin sektöründe ortaya çıkan kalite sorunları zeytin yetiştiriciliğinden ve sofralık zeytin üretiminin diğer aşamalarından kaynaklanabilmektedir. Özellikle üretimde, bölgelere adaptasyonu denenmeyen çeşitlerin seçiminin yanında, adaptasyon çalışmaları yapılmış çeşitlerin hatalı uygulamalarla yetiştirilmesi de ciddi kalite kayıplarına neden olabilmektedir. Ayrıca kayıt dışılığın yaygınlığı, kontrol ve denetimlerde etkinliğin sağlanamaması ve markalaşmanın önünde duran engeller de kalite üzerinde olumsuz etki yaratan diğer faktörler arasındadır. Bu çalışmanın amacı, Türkiye’de sofralık zeytin sektöründe karşılaşılan kalite sorunlarını, bütüncül bir yaklaşımla belirlemek ve çözüm önerileri geliştirmektir. Aslında, Türkiye’de son yıllarda sofralık zeytine ayrılan alanların ve sofralık zeytin işleyen işletmelerin artması neticesinde oluşan rekabet ortamı, AB uyum süreci, tüketicilerin sağlık açısından bilinç düzeylerinin artması ve standartların uygulanma zorunluluğunun gelmesi kaliteli üretimi olumlu yönde etkilemiştir. Bununla birlikte, kalite konusunda daha etkin sonuçlara ulaşılabilmesi için özellikle sofralık zeytin konusunda gerek özel sektör, gerekse kamu kurumlarınca sürdürülen araştırma çalışmalarına verilen desteğin arttırılması önerilmektedir.
Turkey is among the world's leading olive producing countries with a high potential of the production. Quality problems can be arisen from the period of olive tree growing and/or other stages of table olive processing. Besides the selection of varieties, which are not tested for the adaptation to the regions, growing of the adapted varieties with incorrect applications can cause serious quality loss in the production of olive. The prevalence of 'off-the-record' in the sector, lack of an effective control and inspection mechanism and the obstacles in branding is expressed among other factors that make negative impacts on the quality. The aim of this study is to identify the quality problems encountered in the table olive sector in Turkey by taking the sector into consideration as a whole and propose the some solutions. In fact, recent conditions such as a competitive state as a result of the increase in the areas allocated to the table olive growing and the number of enterprises established, the EU adaptation period, the increase of the health-awareness by the consumers and the obligations for the implementation of the standards’ have improved the table olive production in a positive direction in Turkey. However, in order to achieve more effective results on the quality issue, it is recommended that the support for more research studies, especially on the table olive, carried out by private sector and public institutions be increased.
