Abstract

Bu çalışmada, farklı dumanlama tekniklerinin olgunlaşma süresince Füme Çerkez peynirinin mikrobiyolojik, fizikokimyasal ve duyusal özelliklerine etkisi incelenmiştir.Peynirlerde olgunlaşmanın 2., 15., 30., 60. ve 90. günlerinde mikrobiyolojik olarak toplam mezofilik aerobik mikroorganizma, maya-küf, toplam Staphylococcus, toplam Koliform grubu bakteri ve Escherichia coli sayısı; fizikokimyasal olarak kurumadde, yağ, kurumadde de yağ, titrasyon asitliği, pH, kül, tuz, kurumadde de tuz, protein, su aktivitesi, renk (Hunter L,a,b), uçucu aroma bileşenleri ve benzo[a]pyrene değerleri ile duyusal olarak yapı ve görünüş, tat, koku, renk, aroma yoğunluğu, tuzluluk derecesi ve toplam kabul edilebilirlik değerleri belirlenmiştir.Doğal dumanlanmış peynirlerde sıvı dumanlanmış peynirlere göre mikroorganizma sayısı daha düşük bulunmuştur. Dumanlama yöntemi Çerkez peynirlerinin kimyasal ve biyokimyasal özellikleri üzerinde belirgin bir farklılık yaratmamıştır. Dumanlanmış peynirlerlerde en fazla butanoic acid, tetramethyloctane, 1,2 benzenedicarboxilic acid, diethyl ester aroma bileşenleri tespit edilmiştir.Genel olarak doğal dumanlanmış peynirler yapı ve görünüş gibi duyusal özellikler bakımından daha çok beğenilmiştir. Fakat doğal dumanlanmış Çerkez peynirlerinin dış kısmında polisiklik aromatik hidrokarbon (PAH) varlığının indikatörü olan benzo[a]pyrene saptanmıştır.Sonuç olarak doğal duman uygulaması sıvı dumana göre mikroorganizmaların gelişmesini engelleyici etki göstermesine rağmen, doğal dumanlanmış peynirlerin dış kısmında benzo[a]pyrene saptanması ve bu bileşenin olası karsinojenik etkisinin bulunması nedeniyle sıvı duman solüsyonu uygulaması dumanlanmış Çerkez peyniri üretimine alternatif olacaktır.
The effect of smoke application method on the microbiological, physicochemical and sensorial characteristics of smoked Circassian cheese during ripening was studied.The smoked cheeses were analysed microbiologically for total mesophilic aerobic microorganisms, yeasts-molds, total Staphylococcus, total Coliform group bacteria and Escherichia coli counts; physicochemically for dry matter, fat, fat in dry matter, titratable acidity, pH, ash, salt, salt in dry matter, protein, water activity, colour (Hunter L,a,b), volatile aroma components and benzo[a]pyrene values; and organoleptically for texture and appearance, taste, odour, colour, aroma intensity, salinity and total acceptability values throughout a 90-day ripening period (with sampling at 2, 15, 30, 60 and 90 days).The microbial counts on natural smoke applied cheeses were found to be lower than liquid smoke applied cheeses, however, there was no significant difference on physicochemical properties with reference to smoke application technique. The predominant aroma components of smoke applied cheeses were determined as butanoic acid, tetramethyloctane, 1,2 benzenedicarboxilic acid, diethyl ester.Nevertheless, benzo[a]pyrene, indicator component of the polycyclic aromatic hydrocarbons (PAH), was detected on outer surface of natural smoke applied cheeses, these smoked Circassian were the most appreciated in sense of sensorial properties such as texture and appearance.It can be concluded that, even though natural smoke application inhibited the growth of microorganisms than liquid smoke application, the determination of benzo[a]pyrene on outer surface of natural smoke applied cheeses and the possibility of the carcinogenic effect of this component, liquid smoke method stands as an alternative for smoked Circassian cheese production.
